How I Make the Jerky

  • Buy It

    Find a local supplier of whole uncut Eye of Round (To me this is the best cut of beef for Jerky)

  • Trim and Cut It

    Take your Eye of Round, trim off all the fat, and slice into ¼ inch slices. You can keep the fat trimming to make Beef Tallow.

  • Weigh and Measure It

    Cut the slices into uniform pieces, weigh and measure how much meat you need for your jerky recipe.

  • Marinate It

    Marinate your meat for 24 to 48 hours. The longer the better the flavor.

  • Rack It

    Drain the marinade from your meat and lay it out on your dehydrator trays.

  • Dehydrate It

    Dehydrate your meat according to your recipe instructions.

  • Package It

    Weight and package your Jerky! Be sure to us an oxygen absorber in each bag!
